Roasted Poblano & Garlic Enchiladas

Ingredients

  • ½ lb. ground beef

  • ½ small yellow onion, chopped

  • 1 pouch Le Sauce & Co. Roasted Poblano & Garlic gourmet finishing sauce

  • ¼ tsp garlic powder

  • ¼ tsp cumin

  • ¼ tsp dried oregano

  • ¼ tsp smoked paprika

  • Salt & pepper to taste

  • 4 oz can green chilis

  • 1 cup cheddar jack cheese, divided

  • 5 medium tortillas

  • Fixings for serving (tomato, sour cream, avocado, cilantro, hot sauce)

Preparation

  1. Preheat oven to 350 degrees.

  2. In a medium skillet, brown the ground beef with chopped onion until the beef is cooked through.

  3. Meanwhile, in a small saucepan heat the Roasted Poblano & Garlic sauce over low heat until warmed through.

  4. Add the meat, add in the garlic powder, cumin, dried oregano, smoked paprika, salt and pepper.

  5. Stir in the green chilis, ½ cup of the shredded cheese, and 1 tablespoon of the poblano sauce.

  6. Add a very small amount of the poblano sauce to the bottom of a square baking dish.

  7. Divide the beef mixture evenly onto the tortillas, roll tightly and place into the baking dish.

  8. Pour remaining sauce over the top, and sprinkle with remaining ½ cup of cheese.

  9. Cover with foil and bake for 15 minutes.

  10. Remove foil and bake for another 5-10 minutes.

  11. Serve with fixings and a side of rice, enjoy!
