Creamy Roasted Poblano Pasta, Shrimp & Blistered Tomatoes

Ingredients:
  • Pasta
  • 10 shrimp
  • 10 tiny tomatoes
  • Roasted Poblano & Garlic by Le Sauce & Co
  • Olive Oil
  • Salt
  • Pepper
  • Optional:fresh cilantro
HOW: (step by step):
  • Boil water for pasta (5 min)
  • Season shrimp with a pinch of salt & pepper
  • In a fry pan or sauté pan, add abut a tablespoon of olive oil, set to low heat
  • When water is boiling add pasta and set your timer for 9 minutes unless you are using fresh pasta which cooks much faster
  • Wait 5 min
  • Add tomatoes to pan with olive oil and turn up heat to medium and sauté for 2 min
  • Add shrimp to pan and turn to heat down to low.  Cook for 1 minute each side
  • Timer just went off
  • Add drained pasta to pan
  • Pour sauce over everything in pan & stir
  • Simmer on medium for one minute
  • Plate & enjoy
  • If you opted for cilantro, chop & add on your plate.  There is fresh cilantro in the sauce so a little fresh adds bright flavor
