Shrimp Tacos with Curry Slaw

  • Small Slaw Mix – prepackaged
  • Shrimp: 10
  • Avocado
  • Olive oil
  • Salt & Pepper
  • Fresh Cilantro
  • Sweet Red Pepper
  • Lime
  • Corn tortillas: small package
  • Thai Red Curry finishing sauce: 1 bottle

HOW: (step by step)
  • For the slaw, in a medium bowl add about two big handfuls of slaw mix, chopped cilantro (about 2 T), squeeze 1 lime wedge into mix and add 3T of Thai Red Curry sauce and stir. When all completely mixed, all of the slaw should have a lite coating of curry sauce. set aside in fridge.
  • Slice Avocado, set aside
  • Slice sweet red pepper
  • Season shrimp with a pinch of salt and pepper
  • In a skillet or sauté pan add 1T of olive oil and set to medium
  • Add shrimp and sauté for about 2 minutes per side until the shrimp is cooked through. Remove from pan
  • Add sliced sweet red peppers to pan and season with a pinch of salt & pepper, satire for 4 minutes
  • Warm tortillas in microwave or stove top
  • Build your tacos top with Thai Red Curry sauce and enjoy.
