Thai Red Curry Stir Fry

Ingredients:
- Rice: 1 cup
- Your favorite veggies.
- For the dish shown we used:
- Sugar Snap peas: ¼ lb
- Onion: ½ small yellow
- Red & Yellow Pepper: ½ of each
- Purple Cabbage: one handful
- Olive oil or sesame oil if you have it: 2 tablespoons
- Sesame Seeds: Optional
- Shrimp: 12 pealed and deveined
- Le Sauce & Co. Thai Red Curry finishing sauce: About ½ bottle
- For the dish shown we used:
Preparation:
- Rice: about 20 min. Follow the recipe on the package
- Chop all Veggies to bite size
- When rice is 3/4 done, start the stir fry. This part will only take 5 minutes
- In a skillet, add oil and place on medium heat
- Season Shrimp with just a pinch of salt & pepper
- Add veggies to pan and season with salt & pepper
- Turn heat to high and sauté veggies for about 3 minutes
- Add shrimp and continue to sauté for another 3 minutes
- Add sesame seeds (optional)
- Turn off heat
- Heat Thai Red Curry finishing sauce in micro or on the stovetop
- Add rice to the plate first then pile on the veggies, shrimp and finish with Thai Red Curry sauce over everything
- Enjoy!
