Why Different Types of Salt Don’t Taste Equally Salty
You followed the recipe.
It called for one teaspoon of salt. You added one teaspoon of salt.
And somehow dinner tastes like the ocean.
The recipe was not necessarily wrong. You were not necessarily careless.
You may have simply used a different kind of salt.
A teaspoon of fine table salt, a teaspoon of coarse kosher salt and a teaspoon of flake salt can contain very different amounts of actual salt. The spoon is equally full—but the crystals inside it are not built the same way.
That is why recipes can be confusing when they say “one teaspoon of salt” without telling you which salt they mean.

At its simplest, culinary salt is primarily sodium chloride.
But the salt you see and feel can come in very different shapes and sizes:

A teaspoon measures space.

Salt behaves the same way.
Fine grains settle closely together with very little empty space. Large flakes create more air pockets. A teaspoon of fine salt can therefore contain more salt by weight than a teaspoon of a lighter, flakier variety.

Why fine salt can season more aggressively
Fine table salt contains small, uniform crystals that pack tightly into a teaspoon.

But it also means a measured teaspoon can contain more salt than the same teaspoon filled with a lighter flake salt.
If a recipe was developed using a coarse, airy salt and you substitute the same volume of fine table salt, you may add considerably more salt than the recipe writer intended.

Why kosher salts vary from one another
“Kosher salt” does not describe one universal crystal.
Different brands use different production methods, creating crystals with different sizes, shapes and densities. One kosher salt may be compact and relatively heavy. Another may be hollow, fragile and much lighter.
That means two teaspoons of kosher salt from two different brands may not contain the same amount of salt by weight.
Official manufacturer conversion charts confirm that salt varieties cannot always be substituted equally by volume. Some flake-style kosher salts are also substantially lower in sodium by volume than compact table salt because the flakes occupy more space.
So when a recipe specifies a particular brand of kosher salt, the writer is not necessarily being fussy.
The brand tells you something about the crystal—and therefore how much salt is going into the food.

Light flakes

Large finishing crystals

Why salt can taste different on food
Imagine sprinkling a teaspoon of salt into a pot of soup.
Once it has completely dissolved, the crystal shape is no longer the main issue. The total amount of salt in the pot matters most.
Now imagine sprinkling salt over a tomato, roasted potato or piece of steak.
Crystal shape matters more because the salt is sitting on the surface of the food. A broad flake may create wide, even coverage. A large crystal may deliver a concentrated salty crunch. Very fine salt may dissolve quickly and settle into moisture on the surface.

Five grams of one salt and five grams of another contain roughly the same amount of salt when the products are similarly pure—even if they occupy very different amounts of space.

A kitchen scale removes the empty space between the crystals from the calculation.

Check the package
Look at the Nutrition Facts panel. The serving size may list both a volume and a weight.
If one salt lists ¼ teaspoon as 1.2 grams and another lists the same volume at a lower weight, the first salt will deliver more salt in that measured volume.
Nutrition-label values are rounded, so they are helpful guides rather than perfect laboratory conversions.
Use a conversion chart
Some salt manufacturers provide conversion charts for replacing one crystal style with another.
Start with less
If you cannot determine the correct conversion, add less than the recipe requests.
Cook.
Taste.
Add more only if the food needs it.
You can always add salt.
Dinner is considerably less cooperative when you ask it to give salt back.
Why recipes can go wrong
Recipes often treat salt as if every kitchen owns the same box.
One teaspoon. Add it. Move on.
But if the writer used a light flake salt and you use a compact fine salt, your teaspoon may contain more salt by weight.
The opposite can happen too. If the recipe was developed with fine salt and you use a very light flake salt, the dish may taste underseasoned.
Neither salt is wrong.
The measurement is incomplete.
A truly helpful recipe should identify the salt used, provide a weight or remind the cook to season gradually and taste.
