The Ultimate Indulgence: Classic Demi-Glace Blue Cheese Crumble Burger

If you’re a burger lover who craves gourmet flavors that go beyond the usual, the Classic Demi-Glace Blue Cheese Crumble Burger is your next culinary obsession. This burger is not just a meal — it’s an experience. Rich, bold, and unapologetically indulgent, it combines the umami-packed intensity of a slow-reduced demi-glace with the sharp tang of crumbled blue cheese to elevate the humble burger into a dish worthy of fine dining.

What Makes It Special?

The secret lies in its components, each crafted to bring out the best in the others. The base is a thick, juicy beef patty — ideally made from an 80/20 blend of ground bison for the perfect fat-to-meat ratio. It’s grilled or pan-seared to achieve a crispy, caramelized crust while keeping the inside juicy and flavorful.

But the real star of the show is the demi-glace, a French-inspired sauce made by slowly reducing a mixture of veal stock, wine, and aromatics into a dark, velvety syrup. This concentrated sauce adds a luxurious depth and complexity that simple ketchup or mayo can’t touch.

Then there’s the blue cheese crumble — sharp, creamy, and just funky enough to contrast the richness of the demi-glace. The moment the crumbles meet the heat of the burger, they begin to melt slightly, clinging to the meat and creating an explosion of flavor with every bite.

How to Build It

To construct the perfect classic demi-glace blue cheese crumble burger, follow these steps:

  1. Toast the Bun – Use a sturdy artisan bun like brioche or ciabatta. Lightly butter and toast it to give a golden crispness that resists sogginess.

  2. Cook the Patty – Season the bison simply with salt and pepper, then grill or sear until the desired doneness. Aim for medium-rare to medium for maximum juiciness.

  3. Apply the Demi-Glace – Spoon a generous amount of warm demi-glace over the patty, letting it seep into the crevices and edges.

  4. Add the Blue Cheese – Sprinkle or pile on a handful of quality blue cheese crumbles — Roquefort, Gorgonzola, or Stilton all work beautifully.

  5. Optional Add-ons – Caramelized onions or arugula can add extra layers of flavor, but don’t overdo it — this burger shines best with a few, powerful ingredients.

  6. Assemble and Serve – Stack the burger and serve it hot with a side of fries or roasted potatoes. A glass of red wine or a dark stout makes the perfect pairing.
