Beefy French Onion Sunday Roast Beef

Ingredients
- 1 pouch Le Sauce & Co. Beefy French Onion Gourmet Gravy
- ½ lb roast beef, cut into bite-sized cubes
- 1 cup mushrooms, sliced (button or cremini work well)
- 1 tbsp butter
- 1 tbsp olive oil
- 1 clove garlic, minced
- Salt & pepper to taste
- ½ tsp dried thyme (optional)
- 4 small Yukon Gold potatoes, peeled and diced
- 2 tbsp butter
- ¼ cup milk (adjust for creaminess)
- Salt & pepper to taste
- ½ cup frozen or fresh green peas
- ½ tbsp butter
- Salt to taste
Directions
Heat butter and olive oil in a pan over medium-high heat.
- Add the roast beef cubes and sear for about 2 minutes per side until browned. Remove and set aside.
- In the same pan, add mushrooms and cook for 4-5 minutes until tender.
- Add garlic, thyme, salt, and pepper. Stir for another minute.
- Add peas and cook for 2-3 minutes until warm and tender.
- Return the beef to the pan and mix everything together. Remove from heat.
- Cook the potatoes in the microwave for about 4 minutes on each side. Poke holes in the potato with a fork before heating
- Mash with butter, milk, salt, and pepper until smooth.
- Warm Le Sauce & Co. Beefy French Onion Gourmet Gravy in a small saucepan over low heat until heated through.
- Plate the mashed potatoes, top with the beef and mushroom mixture, and drizzle with the rich gravy. Serve with green peas on the side.
