Ingredients:

  • 2 cups uncooked pasta (penne, rotini, or rigatoni work well)

  • 2 cups cooked chicken breast or thighs, chopped or shredded

  • 1 cup shredded mozzarella cheese

  • ¼ cup grated parmesan cheese

  • 1 tablespoon olive oil

  • Optional: 1 cup baby spinach, chopped sun-dried tomatoes, or sautéed mushrooms

  • Salt and pepper, to taste

 


 

Instructions:

  1. Preheat the oven:
    Preheat your oven to 375°F. Lightly grease a 9x9-inch baking dish or similar-sized casserole dish.

  2. Cook the pasta:
     Bring a pot of salted water to a boil. Cook the pasta according to the package instructions until just al dente (it will cook more in the oven). Drain and set aside.

  3. Mix the filling:
