
Baked "Fried" Chicken with Mashed Potatoes and Roasted Chicken Gourmet Gravy

Ingredients
- 1 pouch Le Sauce & Co. Roasted Chicken Gourmet Gravy

2 boneless skinless chicken thighs
- ½ cup breadcrumbs
- ¼ cup grated Parmesan cheese (optional)
- ½ tsp herbs de provence
- Salt & pepper to taste
- 1 tbsp olive oil (for drizzling)
- 4 small Yukon Gold potatoes
- 2 tbsp butter
- ¼ cup milk (or more for creaminess)
- Salt & pepper to taste
- 1 cup broccoli florets
- Salt to taste
- ½ tbsp butter or olive oil (optional)
Directions
Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a bowl, mix breadcrumbs, Parmesan (if using), herbs de provence, salt, and pepper.
- Coat each chicken thigh in the breadcrumb mixture.
- Place on the baking sheet and drizzle lightly with olive oil.
- Bake for 20-25 minutes, or until golden brown and internal temp reaches 165°F (75°C)
- While the chicken is cooking, cook the potatoes in the microwave for about 4 minutes on each side (Poke a couple times with a fork before putting in the microwave)
- When done, mash with butter, milk, salt, and pepper until smooth and creamy. Adjust consistency with more milk if needed.
- Steam broccoli florets over boiling water for 4-5 minutes, until tender but still vibrant green.
- Season with salt and butter or olive oil if desired.
- Plate the crispy baked chicken alongside creamy mashed potatoes and steamed broccoli for a balanced and delicious meal.
