Ingredients

  • 2 boneless skinless chicken thighs
  • 1 red bell pepper, sliced
  • 2 cups fresh spinach
  • 2 medium potatoes, thinly sliced
  • 1 tbsp olive oil
  • Salt and pepper, to taste

Directions

  1. Preheat to 400°F

  2. Toss sliced potatoes with ½ tbsp olive oil, salt, pepper

  3. Spread on a baking sheet in a single layer.
