
Roasted Chicken with Potatoes, Veggies and Roasted Chicken Gravy

Ingredients
- 2 boneless skinless chicken thighs
- 1 red bell pepper, sliced
- 2 cups fresh spinach
- 2 medium potatoes, thinly sliced
- 1 tbsp olive oil
- Salt and pepper, to taste
- 1 pouch Le Sauce & Co. Roasted Chicken Gourmet Gravy
Directions
Preheat to 400°F
Toss sliced potatoes with ½ tbsp olive oil, salt, pepper
- Spread on a baking sheet in a single layer.
Roast for 25–30 minutes, flipping halfway, until golden and crisp.
While the potatoes roast, season chicken thighs with salt, pepper, and a pinch of garlic powder.
- Heat ½ tbsp olive oil in a skillet over medium heat.
- Cook chicken for 5–6 minutes per side or until cooked through and golden brown.
In the same skillet, add sliced red bell pepper and cook for 3–4 minutes until tender.
- Add spinach and stir until wilted, about 1–2 minutes.
Warm Le Sauce & Co. Roasted Chicken Gourmet Gravy in a small saucepan or microwave until hot.
Plate roasted potatoes with chicken thighs on top.
- Add the sautéed peppers and spinach on the side.
- Spoon warm roasted chicken gravy generously over the chicken and potatoes.
