Directions
Place a pot of water on the stove to boilSeason the chicken breasts with salt, pepper.Heat the olive oil in a skillet over medium heat.
Add the chicken breasts to the skillet and cook for 5-7 minutes on each side, until fully cooked through and browned on the outside. Once done, remove from the pan and set aside.
When the pasta water is boiling ,add the pasta and set a timer for the proper amount of time
In the same skillet, add the mini red bell peppers and chopped spinach. Sauté for 2-3 minutes until the spinach wilts and the peppers are heated through.
Pour the Le Sauce & Co. Savory Provençal Gourmet Pasta Sauce into the skillet with the peppers and spinach. Stir and bring to a simmer for about 3-5 minutes until everything is well combined and heated through.
While the sauce is simmering, slice the cooked chicken into thin strips
Add the sliced chicken to the skillet with the sauce and vegetables, stirring to coat the chicken evenly in the sauce.
When the pasta is done, drain and add to the skillet and mix together
Plate the dish and garnish with fresh parsley if desired.
